Today I am sharing with you smoky flavor roasted eggplant curry with some vegetables and very little spices. It’s called baingan ka bharta. Ingredients:

1. Medium size eggplant - 1
2. Small size chopped onion - 1
3. Chopped green chili - 3
4. Chopped green onion with onion bulbs - 2 bunches
5. Frozen green peas - 2 tbsp
6. Small size chopped tomato - 1
7. Grated ginger - 2 tsp
8. Grated garlic - 2 tsp
9. Fresh chopped coriander leaves (cilantro) - 1/4 cup
10.Mustard oil - 1/2 tbsp
11.Pinch of asafoetida/Hing
12.Turmeric powder - 1 tsp
13.Cumin powder - 1 tsp
14.Coriander powder - 1 tsp
15.Cumin seeds -1/2 tsp
16.Nigella seeds - 1/2 tsp
17.Black mustard seeds - 1/2 tsp
18.Salt to taste
19.Jaggery powder - 1 tsp
20.Dry mango powder - 1 tsp
21.Pinch of garam masala powder
