Today we are going to make a Strawberry Mousse Charlotte Cake with a layer of strawberry jelly on top! In this video we are going to focus on making ladyfingers from scratch, as well as strawberry mousse.

*Ingredients 材料:*
*1) Ladyfingers (手指饼干):*
*PART 1:*
- 2 Egg yolks (2个蛋黄)
- 30g Sugar (30克 糖)
*PART 2:*
- 2 Egg whites (2个蛋清)
- 50g Sugar (50克 糖)
- 80g Cake flour (80克 低筋面粉)
*Bake in pre-heated oven at 375°F (190°C) for 10 minutes, until it’s golden brown.* (375°F /190°C 烘烤 10 分钟,直至呈金黄色。)

*2) Strawberry Mousse (草莓慕斯):*
• 1-1/2 cup dice strawberries/strawberry puree (1-1/2 杯草莓丁/草莓泥)
• 2 tsp Agar-agar powder (2 茶匙燕菜粉)
• ¼ cup Sugar (1/4 杯糖)
• 1 tbsp Lemon juice (1 汤匙 柠檬汁)
• 1-1/2 cup Heavy whipping cream (1-1/2 杯浓奶油)

*3) Strawberry Jelly (草莓果冻):*
• 1 cup Strawberry puree (1 杯草莓泥)
• 1 tsp Agar-agar powder (1 茶匙燕菜粉)
• 2 tbsp sugar (2汤匙 糖)
