This is the second installment of my Zatarain's series and it is an awesome way to make a delicious, buttery, sweet, and savory meal just by adding some chicken and fresh veggies. You can boost the health even more by stirring in a few handfuls of fresh leafy greens such as kale or mustard greens.
Also, you can use other meats besides the usual chicken. Try with pork or smoked sausage!

I buy Zatarain’s mixes all the time and especially stock up whenever they’re on a BOGO. They make an easy and flavorful base that you can customize with your choice of meats and veggies. So I thought it would be fun to make a series of videos showing how to doctor them up and make them into complete meals using my Instant Pot. Stove-top is not the only way to prepare these mixes.

Today’s Ingredients:
2 TB butter
2 TB extra virgin olive oil
1 lb chicken thighs, 1-inch pieces
1 medium onion, chopped
1 medium green bell pepper, seeded and chopped
2 celery ribs with leaves, chopped
1½ cups chicken broth (Better-than-Bouillon and water in the video)
8 oz box Zatarain’s Bourbon Chicken
½ cup chopped scallions
½ cup chopped fresh parsley

Instructions: 4 minutes + 10 min NPR
1. Preheat the Instant Pot on the highest sauté setting and add the butter when the display reads “HOT.” Then add the olive oil when the butter is almost completely melted. Add the chicken, onion, bell pepper, and celery. Cook, stirring occasionally, for about 5-7 minutes until the veggies are just softened and the chicken is no longer pink on the outside.
2. Add the chicken broth and scrape up any stuck-on browned bits from the bottom of the pot (there shouldn’t be much since the veggies have so much liquid in them already). Spread the boxed rice mix over the top as evenly as possible and use a spoon or spatula to spread the rice and press it down into the liquid without stirring up the bottom. We want the rice to float on top to prevent sticking to the bottom.
3. Lock and seal the lid and cook on high for 4 minutes followed by a 10 minute natural pressure release. Then release any remaining pressure before opening the pot.
4. Stir in the chopped scallions and parsley and give it a taste test. Adjust seasonings to your liking. Then loosely cover and let sit for 10-15 minutes to let any excess liquid fully absorb into the rice.
5. Stir, serve, and ENJOY!
