Fish skin salad is a refreshing snack in Guangdong, the home of Cantonese food in China. Made with boiled fish skin, peanuts, ginger, scallions, and soy sauce, the dish is bursting with umami and seafood flavors.

We went to Chen Tian Ji, a family-owned shop in Guangzhou that’s said to have invented the dish in the 1970s, to see how it’s made.
