Hey there, curry lovers! If you're short on time but still craving a spicy and hearty meal, we've got just the thing for you - Aloo Ki Katlian, a spicy potato curry that's 100% vegan. This dish is a blast from the past and an old school favourite that never disappoints. Just a heads up, this curry is hot, so adjust the spices if you're not a fan of heat.

Now, let's get to the good stuff. Our recipe is good for 4 servings and you can whip this up in just 25 minutes!

(0:07) Quick note: For an extra kick of flavor, we're using a teaspoon of roasted ground coriander and cumin. We make this by roasting the whole spices, grinding them and storing them for later use. But if you want to keep it simple, you can just use half a teaspoon of each in powdered form. The roasting process really amplifies the earthy, aromatic flavours of these spices. Ingredients:
4-5 tablespoons of cooking oil
1 teaspoon of mustard seeds (rai)
2 cloves of garlic, finely chopped
8-10 curry leaves
4 large white potatoes, thinly sliced
1 medium tomato, finely diced
1 teaspoon of tomato purée
Juice of half a lemon
1 teaspoon of salt
1 teaspoon of red chilli powder
½ teaspoon of turmeric powder (haldi)
½ teaspoon of crushed chillies
½ teaspoon of black pepper

1 tablespoon of dry fenugreek (kasuri methi)
2-3 green chillies, cut into 1-inch pieces
A handful of fresh coriander
1 teaspoon of garam masala
