Recipe Adapted from Chow:

Ingredients:
Pudding -
1/3 cup granulated sugar
2 tablespoons cornstarch
1/4 teaspoon fine salt
2 1/4 cups whole milk
3 large egg yolks, lightly beaten
3 tablespoons unsalted butter, cut into small pieces
2 teaspoons vanilla extract
1 T lemon juice
1-2 T. melted chocolate
Yellow food coloring
Refrigerated pie crust
Mini chocolate chips
White chocolate
Orange Starburst
Directions:
1. Roll out pie crust and cut with cookie cutter, about 1/2" larger than tart shell diameter
2. Press dough into tart shells and place small square of parchment paper over. Add in baking beans (or pastry weights) to center of tart to weigh paper down. This will help the tart brown evenly
3. Bake for 13 min at 425F, cool and remove weights and parchment.
4. Prepare pudding recipe as directed, and divide into three bowls.
5. To one bowl, add in 1 T. lemon juice and yellow food coloring
6. To next bowl, add in 1-2 T melted semisweet chocolate
7. Leave last bowl plain vanilla
8. Spoon pudding into cooled tart shells, refrigerate 2 hours or until set
