A quick and easy Chickpea Curry recipe perfect for a weeknight dinner, ready to go in 15 minutes. It's a classic vegan dish that's healthy and yummy. Serve with roti, rice, naan or flaky bhaturas (recipe coming next week!) and enjoy!

Our recipe serves 6 but it can easily be scaled up or down and the spices adjusted to suit your taste.

Ingredients
3 tablespoons of cooking oil
1 medium puréed onion

1 liquidised tomato (or 100g of tinned tomatoes)
500g of boiled chickpeas (or 2 tins of chickpeas with drained weight of 480g)

1 teaspoon of salt (or to taste)
