*What is “Kitakata Ramen”?*
Kitakata ramen is one of Japan’s “top 3” ramen, alongside Sapporo and Hakata ramen. What characterises this ramen is its unique curly noodles, which are made with flour that has a higher water content than regular ramen noodles and are left to age for longer to provide a flavour punch and a chewy and springy texture. The original Kitakata ramen noodles were created by Ban Kinsei, a Kitakata ramen shop founder, who migrated to Japan from China. He openly shared his secret to making the perfect noodles so that the whole city could enjoy the flat profile and curliness of the noodles that is so perfect for collecting the ramen soup goodness! Speaking of soup, Kitakata is known for its soy sauce “kura” warehouses, with the most in any city in Japan. Local stores supply soy sauce, which uses water from the nearby Tsugamine mountain stream (said to be one of Japan’s 100 most exquisite waters), for a light and refreshing, yet umami-filled broth. Most of the 120+ ramen stores in Kitakata City use soy sauce as a base for their soup, but you can also find other flavour varieties. The common factor among all of them are the curly Kitakata ramen noodles!

*About the restaurant*
Bannai Shokudo is Kitakata’s most famous ramen restaurant! And considering Kitakata City has more ramen shops per capita than anywhere else in Japan, it has a lot of competition to beat! The store gave birth to the idea of “asara” (“asa ramen” or “morning ramen”) when late night factory workers and early rising farmers came looking to fill their stomachs in the city. Bannai is one of few ramen restaurants that opens at 7AM for locals and ramen pilgrim tourists alike to get their fill of morning ramen! Regardless of the day of the week, expect to queue outside the store even before opening time if you want to participate in this uniquely Japanese morning routine!

*What to eat*
Shokudo Bannai is such a Kitakata ramen specialist, that their menu consists of only 4 items (excluding a side of rice): ramen!

We ordered the original しなそば (“shina soba”), a salty soy-sauce ramen which comes with 4 generous slices of Bannai’s reduced oil pork belly “toro-chashu”, menma bamboo shoots, and negi green onions on top of the signature curly Kitakata noodles, and the famous 肉そば (“niku soba”) which is completely topped with 12 pieces of charshu for the hungriest of carnivores!

Bannai Shokudo is so popular that they have opened 57 branches throughout Japan from Okinawa to Tokyo to Hokkaido, and abroad in major cities including Los Angeles and New York under the name “Kitakata Ramen Ban Nai”!
