ミシュランガイド初年度より７年連続で一つ星を獲得した名店であり、海外からはハリウッド俳優のブラッドピッドが自分の意思で訪れ、日本ではタモリさんが行きつけにしているとの噂もある有名そば店であります。
基本的に提供食べ物以外は撮影禁止のお店なので、にこらさんの十割手打ち蕎麦の打ち方・作り方の様子は非常に貴重な映像になるのではと思っております。
ミシュラン一つ星を獲得し続けた日々を超え、今はミシュランガイドにはもう掲載されていないという現実の中、やはり続くのはずっとこれまでと変わらない美味しいそばを打ち続ける日々。
ミシュランに固執するわけでもなく、ただ生きる為に淡々とそば作りへと向き合い、美味しいそばを求めるお客さんを納得させてゆく。
職人としてのプライド、自尊心、少しの苛立ち、そば作りへのずっと変わらない想い、それらを強く感じながらの撮影と相成りました。

Today's video is a close look at "nicolas", a popular handmade soba noodle restaurant in Nishijin, Kyoto Japan.
It has been awarded michelin one star for seven consecutive years since the first year of the Michelin Guide and is a famous restaurant frequented by Japanese gourmets.
The homemade flour is slowly ground in a stone mortar over and over again without adding heat, so that you can feel the original sweetness and aroma of soba.
Since I enjoyed the homemade "karasumi" when I visited there before, I chose the speciality "karasumi" soba for my soba set this time! (To say the least, it's ridiculously good.)
After the days of winning michelin one star, the reality is that we are no longer listed in Michelin, but he will continue to make the same delicious soba as before.
He is not obsessed with Michelin, but simply faces the task of making soba for a living, and convinces customers who want delicious soba.
I strongly felt his pride as a craftsman, his self-esteem, a little irritation, and his unchanging passion for making soba.
