Beccalai Tokutaro
This long-established bakery in Yokohama produces and sells about 60 kinds of bread, ranging from authentic bread to traditional favorites such as anpan (sweet bean buns) and cream buns.
It is a pleasure to watch the bakers, led by the owners Jun and Kumiko Tokunaga, baking one original bread after another with great vigor and dexterity.
There is always a long line of people waiting in line at this famous bakery, which is crowded with both local customers and tourists from faraway places. I spent two days in close contact with the bakery. Vice President Kumiko Tokunaga took time out of her busy production schedule to tell me all about the fun of baking bread and what she thinks about her baking.
